What is Ajvar?

Ajvar or Ajwar (Macedonian and Serbian Cyrillic ?????, Bosnian, Slovenian and Croatian Ajvar, Turkish Ayvar, Albanian Ajvari, also Hajvar or Kavyar) is a mixture of peppers and eggplants with a mild to spicy taste and is considered a specialty of Balkan cuisine. There are two variants: a sour spicy puree of peppers (80%) with eggplants and chili peppers, and an eggplant puree seasoned with pepper, both flavored with garlic, brandy vinegar and/or lemon, salt and sugar. Ajvar is used as a side dish for grilled meat (especially lamb), sausages, vegetables, as a spread, for seasoning soups, goulash, sauces and as a dip. Ajvar is suitable for making preserves[1], traditionally in the fall in the Balkans, large quantities of peppers and eggplants are roasted outdoors for ajvar.
